The Diamond distillery is located on Guyana's east coast, close to the Demerara River. It is part of Demerara Distillers Limited (DDL), a company founded in 1670. Diamond is home to an impressive collection of unique, vintage stills, each contributing distinctive characteristics to the rums produced. These include: Enmore Wooden Coffey Still, Port Mourant Double Wooden Pot Still, Versailles Single Wooden Pot Still, Diamond Two-Column Metal Coffey Still and Diamond Continuous Savalle Still. 

The Savalle still takes its name from its inventor, Edouard Savalle, a 19th-century French engineer. It comprises several distillation columns, typically four. Each column plays a specific role in the distillation process, enabling precise separation of the volatile components of the fermented mixture. Unlike pot stills, which require loading and unloading after each distillation cycle, the Savalle still can run continuously. This improves distillation efficiency and productivity. The columns of the Savalle still contain perforated trays which facilitate contact between the rising vapour and the descending liquid, thus increasing the efficiency of the separation of volatile components.
